Don't get me wrong, I love this cookbook. That is, I love reading it and looking at tips on what NOT to do in a recipe, and if I have something particular in mind that I want to cook, I go to this book for a tried-and-true recipe. The major caveat is that, when I want to cook something quickly on a weeknight, when I'm starved for time - I do not haul out this monster book. I loved this cookbook, and I bought 3 more for gifts and they seemed to like it too. I love reading about the "science" behind the decisions made for recipes and techniques, although a lot of it is still opinion and conjecture...it makes for interesting reading. The packaging on the other hand was horrible. 4 heavy books in a box with little packing, left to bounce around, they popped open the box, and UPS left it outside to get snowed on.
